2006 Rosé
Lovely classic bright, translucent orange pink salmon rose colour, with nice tangy fruity nose leading on to a very tasty zingy palate with a crisp dry finish in the best European style. A French style rosé for drinking at any time, but great with food. Should be served lightly chilled for a very refreshing experience. Terrific to drink by itself, but great with spicy food, Asian and pizza. 13.5% Alc/Vol 750ml


2003 Merlot
Deep brick red colour with purple hues, dense and vibrant. The bouquet is very plummy, aromatic with slight minty overtones and dark chocolate and rum in the background with hints of fruit cake. The palate is elegant with soft but firm tannins. A rich wine with good acid balance and great length. The flavours of fruit mince and plum follow through from the bouquet. A very satisfying wine which should reward short term cellaring. 14.6% Alc/Vol 750ml

2004 Merlot
This wine has a lovely dark, rich colour showing obvious youth. The bouquet is classic rich and friendly Merlot showing lots of fruit cake and plums, which leads on to a full and soft fruity palate. The finish is clean and long. Very nice now but will improve in the cellar over the next three or four years. A very satisfying full flavoured drink, with a long clean finish. A great wine to drink with gamey meats. 14.5% Alc/Vol 750ml

2005 Merlot
Very dark colour showing youthful purple with a rich pungent bouquet of ripe plummy fruit from a great vintage and cedary French oak in complete harmony. The palate is smooth and full and satisfying, with a long finish, which will repay short to medium term cellaring, but making for a lovely medium weight drink now. Very Moorish. 13.6% Alc/Vol 750ml

2006 Merlot
This wine has a lovely youthful colour from a very cool vintage, with an outstanding aromatic fruit bouquet of toast oak and pungent plums. An elegant, refined and intense palate with perfect balance giving a delicious drink now and for the short to medium term. This wine will drink well over several days showing its winemaking and vineyard pedigree. A great wine to drink with gamey meats. 12.5% Alc/Vol 750ml


2003 Shiraz
Lovely vibrant deep purple colour showing great intensity. The bouquet is very perfumed white pepper, very aromatic and smells concentrated, full and fruity. The palate is rich with great length and fine acid balance, with big mouth filling tannins, yet soft in the mouth with a nice fruity finish. A mouth watering wine of great potential. Cellar for 2 to 3 years to reveal its potential. 13.5% Alc/Vol 750ml

2005 Shiraz
Very dark in colour as expected from a cool climate Shiraz, with good concentration. This is a very tightly knit wine with a soft spicy peppery nose leading to lovely rich spicy fruit on the middle palate and a very long flavoursome finish, complemented by silky tannins. This wine is a delight to drink now and will repay short term cellaring. 14.3% Alc/Vol 750ml

2006 Shiraz
Dark youthful crimson colour, with an enticing savoury nose of plummy red berries and an exotic hint of orange spice from the co-fermented Viognier portion. This is an elegant and refined wine with a very tasty savoury mid palate. A fruit driven style with good intensity and length leading to a long clean satisfying finish. A delicious wine for drinking now and short term cellaring. 13.0% Alc/Vol 750ml


2003 Merlot-Shiraz
A new blend created by Hillbillé to show the synergy between these two aromatic varieties. The colour is dense rich purple, almost black. The bouquet is very fruity and concentrated with confectionary characters, hints of fresh roasted coffee beans and cinnamon. A very perfumed wine. The palate is mouth filling with nice round tannins, soft raspberry and plum, spicy peppers, plus light vanilla character from the French oak, leading to a rich vibrant finish. The balance between the fruit, acid and tannins is superb leading to a long clean finish. 14.0% Alc/Vol 750ml

2004 Merlot Reserve
Very deep and youthful in colour, deep brick red with purple hues, dense and vibrant. A gorgeous aromatic bouquet of cedary French oak and plummy perfumed fruit, which leads on to rich oaky, (at this youthful stage) intensely perfumed middle palate with rich fruit, seamless silky tannins and a long lingering refined finish. The oak should soften over the next twelve months leaving a very complete complex wine with elegance and impact. The best fruit from a great vintage at Hillbillé has gone to make this one of Western Australia's best ever Merlots. 2003 Shiraz Reserve
Deep and vibrant youthful almost black in colour with intense purple hues. The bouquet displays rich concentrated peppery fruit with dusty oak overtones with hints of classic pencil shavings, cedar and vanillin flavours from the 18 months maturation in new French and American oak baroques. The palate is rich, displaying nice fruit weight and texture with fine grained tannins, giving the middle palate the weight required for cellaring, and this combined with lovely balance and refinement gives the wine a classic long and firm finish. A spectacular first up Reserve Shiraz that will reward medium term cellaring. 13.5% Alc/Vol 750ml

2005 Shiraz Reserve
Very rich dense youthful colour showing dense hues of youthful purple. A lovely spicy peppery nose fully integrated with the new French and American oak, which follows through on the palate - always a good sign of a particularly well made wine. The palate is rich and smooth and long with terrific balance melding with the firm but ripe tannins giving this wine distinction and refinement to the end. A very fine wine indeed, and one which will repay medium term cellaring. 14.4% Alc/Vol 750ml

2005 Shiraz Viognier
The flagship wine from Hillbillé. This wine is the first vintage of this southern Rhone blend, which will only be made from a selection of the best fruit from the Hillbillé vineyard in very good vintages. Only 100 cases are made using the finest new French oak with truly "hands on" winemaking from the winemaker. This wine has a lovely aromatic bouquet of spicy cool climate Shiraz lifted by the co-fermentation with 3% Viognier adding nuances of apricot and orange giving an opulent, almost heady aroma. This leads to a palate displaying similar flavours with silky fruit and tannins to make a completely refined and elegant expression of the style. The finish is smooth and silky with refined tannins and is very long, with exquisite balance. This wine was applauded by Ray Jordan as Western Australia's best Shiraz Viognier in 2007, and is an absolute delight to drink now, but will be bettering five years if you can keep your hands off it. 14.0% Alc/Vol 750ml
